Getting married is easy, it’s the wedding that’s difficult. After an uncommonly short engagement of just a couple of months – which was also the amount of time I had to plan a small wedding – we are back from our Oregoneon honeymoon (sadly). That being said all of my time and attention has been tied up with packing, moving, unpacking, wedding planning, wedding having, traveling, honeymooning and readjusting to life. Even then, a girl has got to eat and this girl will always start with her favorite meal of the day, breakfast!

Happy May! Spring has sprung in Texas but in reality it’s more like pre-summer. There are really only two seasons in Texas: summer and winter. Then we have a tiiiiny little amount of time that’s pre-spring and pre-winter. But right when the warmer weather peeks its head through the clouds I get out and about.
Turk-ish Granola
Does anyone else have a hard time getting going on workday mornings or is that just me? I work in the coffee industry and therefore usually don’t make coffee at home, but I need something before interacting with people in a more acceptable and civil manner. This granola helps as a “band-aid” until I get the real stuff.
Smoky Tortilla Soup
Texas is known for having all four seasons in one day. This winter has been no exception with sunny weather in the day suddenly plummeting into nearly frozen temperatures at night and a rain storm or two during the day. And on cold, wet nights I crave soup. All kinds, I’m really not biased. This one night in particular I didn’t want to leave the house so I used ingredients that I had on hand, intended for another dish, and made a soup. It helps that I also keep a plethora of Latin ingredients in my pantry at all times.
This soup is so smoky and deep, in almost no time at all, which deceives you in to thinking it has been on the stove all day long.
Super Easy Overnight Oats
The new year brings lots of new projects and things to the surface that need to be implemented or managed. With that there’s a certain level of time needed to dedicate to each of those. That being said, I’ve been so hard pressed for time as of late that I have been heavily dependent upon quick meals and snacks. The most time that I’ve had for breakfast prep is overnight oats. If I can’t do that then I’m left with a banana on my way out the door for work.
Golden Oats
Like the first rays of a rising sun, these overnight oats burst with a bright golden color from the anti-inflammatory powerhouse root turmeric.
