Warm Duck and Kale Salad

I love eating fresh ingredients but sometimes the idea of eating a cold salad, in a cold house, with the visual of winter outside every window your eye happens to graze across, simply does not sound really wonderful. The work around here is a warm salad – still a salad, with healthy, fresh, and yes, cold ingredients but with warm, cooked components. Warm salads help sustain me through the wintertime, along with some cozy soups. Especially when I’m trying to distract myself from the fact that there’s probably fresh cookies around every corner of my kitchen and pantry.

Fresh Salad Rolls

Who doesn’t love handheld food?  Let’s be real.  It’s easy to grab something to-go for someone with a busy work schedule or children.  Most options for these quick bites are not so great for you or your waistline, but these fresh Thai-inspired salad rolls are great!  They are light, refreshing and fill you up without weighing you down, literally.  And with the summer months quickly approaching for another scorching Texas summer, this recipe is perfect.  It just takes a little time and love and you’re golden.

Spring Chicken Salad

Being a professional pencil pusher, by the time lunch comes I’m super hungry and really needing a pick me up from the lack of occupational inspiration.  I want a filling, satisfying meal but I don’t want something that’s going to weigh me down and make me tired and useless for the rest of the workday.  I also try to eat well during the week so I can splurge a bit on the weekends without completely ruining my fitness routine.  So by some means of random inspiration I devised this incredibly delicious, filling and even refreshing chicken salad that’s on the light and healthy side that gives me that very necessary energy boost to last until 5 p.m. It has everything: sweet, salty, savory, crunchy, soft, and creamy!  Everything I used was organic, but you can use what you want. And the good thing about this is you can make it at the beginning of the week and have it for lunch every day!  I love meal planning, especially when it’s this easy!
